Vanilla and Raspberry Wedding Cake


This is my first rolled fondant cake! For it being my first I’m really proud! We also made a lot of gum paste flowers.


The cake itself wasn’t that good. It was just a plain old boring cake. We were supposed to do a cascade of flowers, but I didn’t make near enough for that.


This is the one Shannon made. She went a little bold with the colors. She really likes to do things differently.


This is one Mariea made. Hers is perfect as always. I love the lilies on her cake.

Who doesn’t love a good Caesar salad? Especially with homemade croutons!


Duck can actually be served pink. I wasn’t really a fan, but the saffron rice was really nice.

Devils Food Cake


This week we only had one day of class because of Presidents Day. We made a devils food cake with a chocolate buttercream and a silky ganache.


On top of the cake we made modeling chocolate flowers. Modeling chocolate is really temperamental. If you have hot hands it tends to melt, while you’re working on it. It’s a pain.


Leanne made this one. She dusted her cake with gold dust. (It’s kind of hard to see in the picture).


This is my cake after I sliced it. Look at that beauty. This was the best cake I’ve made. My family loved it. It was really rich and decadent.

This chicken was amazing! It had been brined the night before so it was nice and juicy. I loved the Roasted Butternut Squash and I was surprised by the greens.


Carolina Pulled Pork Sandwiches with Carolina style BBQ Sauce and Sandwich Slaw

We’ve made so many BBQ’s now, they’re all starting to run together, but what makes the Carolina BBQ special is spice and the vinegar. The slaw was a perfect complement to this sandwich too. I could have eaten 10.

My mom loved this one. The Banana’s were caramelized by the hot custard.


My poor car was so loaded down with all the food/supplies.

Deep South Pecan Encrusted Catfish

While I was interested to try the fried green tomatoes, I wasn’t fond of the red pepper sauce,


Pecan Encrusted Catfish with Hush Puppies, Mashed Sweet Potatoes, and Succotash

Pecan’s release a lot of oil into the pan making the catfish cook really fast. I may have under-cooked the catfish. The Succotash was interesting. The Hush Puppies were AMAZING. We ate most of them before we plated.


Peanut Brittle

The first batch I made was really really light. I didn’t let the sugar caramelize. The second batch turned out really well though.
